Light and Easy!

Luckily, it's not every week that we start with a night out on a Monday and a boozy, hearty supper on a Tuesday... I don't think my body would stand it!   However, as that is how this week has panned out so far we decided to plump for a light and easy supper tonight.

I picked up a block of Jus Rol Puff Pastry, a jar of olive tapanade, some goats cheese and a jar of roasted peppers.

Roll out the pastry, smear with the olive tapanade and load with goats cheese and peppers.   Shove in the oven for 20 - 25 mins and voila!   A goats cheese and olive tarty thing.   This paired with left over green salad from Tuesday and the left over garlic bread made a perfect; no fuss; minimum effort; 'we're half way through the week, thank God'; lets slob in front of the TV supper...

Mr. M. didn't even mind that it had no meat in it!
